To make Kettle Corn the way it should be made, it doesn't require alot of sugar. If it's not sweet enough, you need to add a little more salt. Salt is not just salt. You must use powdered salt. (Unflavored and as fine as dust)When you dump a fresh batch of Kettle Corn, it's sticky for just a few seconds and the salt adheres uniformly to the corn when it's stirred. If you use regular table salt, most goes to the bottom of the kettle. The top isn't salty enough and the bottom is so salty you can hardly eat it.
Sugar is one of the purest forms of carbon. It makes sense if you use alot of sugar, it will hold the heat and melt your bags. No need to waste time waiting for it to cool down or use cooling fans. Just reduce the sugar and increase the powdered salt!!! We have tried many many recipes through out the years, and this one sells best, and gets the most raves, hands down!!!
